All-Dressed Up Kale Chips

Ingredients (per baking sheet):

  • ½ bunch kale leaves (approx..)
  • ½ T extra virgin olive oil or melted coconut oil
  • ½ T nutritional yeast
  • 1 t garlic powder
  • ¾ t chili powder
  • ½ t onion powder
  • ½ t smoked paprika
  • ¼ t sea salt, fine grain or pink Himalayan
  • ¼ t cayenne pepper (optional)

Directions:

  1. Preheat oven to 350˚ Line a large, rimmed baking sheet with parchment paper
  2. Remove leaves from the stems of the kale and roughly tear up into large pieces. Freeze the stems to add to smoothies or compost. Wash and spin the leaves until thoroughly dried (if still wet, they will steam rather than crisp in oven)
  3. Add kale leaves to a large bowl and massage in oil until all nooks and crannies are fully coated. Sprinkle with remaining ingredients and toss to combine
  4. Spread kale leaves in a single layer onto prepared baking sheet, making sure not to overcrowd (otherwise this too will steam the leaves rather than crisp them)
  5. Bake for 10 minutes, rotate the baking sheet a full 180˚ and bake for another 12-15 minutes more until the kale begins to firm up. The leaves will shrink up quite a bit
  6. Remove from oven will fully crisp and let cool on baking sheet for 3 minutes before digging in! This really makes all the difference! Enjoy immediately, as they lose their crispiness with time.
  7. Repeat this process for the other half bunch
